Ingredients:
- 4 Fresh salmon steaks (approx.
1" thick)
- Peirano Estate
Vineyards extra virgin olive oil
- Lemon slices (as
desired)
- Fresh Italian
parsley sprigs

- Garlic Chive Mustard Sauce
- 1/2 cup yogurt
- 1 tbs. Peirano Estate Vineyards garlic
chive mustard
- 1 tbs. fresh lemon juice
- 2 tsp. fresh dill
- 2 tsp. Peirano Estate vineyards extra
virgin olive oil
- pinch of garlic
- 12 capers

Preparation:
Combine all ingredients of
garlic chive mustard sauce in a bowl. Cover with plastic wrap and
chill up to 3 hours. Coat a broiling pan with olive oil. Place
steaks on pan 4" from the broiler and cook 6-8 minutes or until the
fish flakes easily with a fork. Remove salmon steaks from the pan
and place on plates. Spoon sauce on top of each steak. Garnish
with lemon slices and parsley.
